Valentine's special - DibbaFella Oysters Recipe
A delightful Valentine's Day special recipe, the DibbaFella Oysters is our take on the popular Oysters Rockefeller. So if you're playing chef this Valentine's Day, these buttery, golden oysters are a surefire way to wow your special someone!

Ingredients:
12 Dibba Bay Oysters (recommended size No 2 or No 3)
30 gms unsalted butter
1 medium-sized red onion
100g organic local baby spinach
1 ½ tsp cooking cream
1 tsp salt
4 tsp local lime juice
1 tbsp olive oil
50g fresh parsley
½ tsp fennel seeds
½ tsp anise seeds
½ tsp pink pepper
¼ tsp black pepper
50g bread crumbs
25 gms parmesan cheese
Recipe:
1 Pre-heat oven to 220 degrees
2 Shuck the oysters and pour the liquor out. Arrange them on a baking tray with foil or rock salt.
3 Melt the butter and olive oil in a saucepan over medium heat.
4 Dice the onion and add it to the saucepan and cook until soft.
5 Reduce heat to low and stir in spinach and cream. Cook for a minute while stirring frequently.
6 Sprinkle the salt, add in the lemon juice and all the spices.
7 Spoon the sauce into each half shell.
8 Sprinkle breadcrumbs and grate the parmesan over the top.
9 Pop the tray into the oven and bake for 5-7 minutes or until the oysters are golden brown. Serve immediately.
